Nonna’s Bolognese
INGREDIENTS
- 4 tablespoons olive oil
- 1 tablespoon butter
- 1 large onion, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, chopped
- 250 g minced beef
- 250 g minced pork
- 1 tablespoon tomato paste
- ¾ cup white wine – sweet or dry
- 1 jar of Katrina’s tomato pasata
- 3 bay leaves
- 2 cups beef or chicken stock
METHOD
Step 1
Heat the oil and butter in a heavy based pan and sauté the onion and celery.
Step 2
Stir through the garlic, add the minced meats and brown on high heat.
Step 3
Stir through the tomato paste and add the wine and cook until the wine has completely evaporated.
Step 4
Add the pasata and bay leaves and season to taste. If you have added dry wine you may need to add 1 tablespoon of sugar at this stage.
Step 5
Simmer for 2 hours adding the stock if necessary.
Step 6
Serve with gnocchi or pasta of your choice. Serves 4.

Katrina’s note: A family favourite, don’t skimp on the simmering time as this allows the flavours to develop and results in a rich and delcious sauce every time.
